Ingredients
- 6 chicken breasts, cut into chunks
- 200 ml reduced fat coconut milk and 200 ml low fat milk
- 1 teaspoon wasabi
- 1 green chilli, finely chopped
- Canola oil
- 140 g sugar snap peas, blanched
- 140 g mangetout, blanched
- 150 g baby peas, blanched
- 200 g Tenderstem broccoli, blanched
- 80 g baby spinach, blanched
- ½ cup coriander, roughly chopped
- Sea salt and freshly ground pepper, to taste
- Brown Jasmine rice, steamed, for serving
Method
- 1. Place a saucepan over a medium-to-high heat.
- 2. Add the coconut milk, milk, chilli and wasabi, and simmer until reduced and thick, stirring occasionally.
- 3. Place another pan over a medium-to-high heat. Add canola oil and let it warm up before adding the chicken.
- 4. Stir-fry until golden and cooked through, but still juicy.
Tip: use an air fryer for a healthier alternative
- 5. Combine the crisp greens and plate. Top with the chicken.
- 6. Stir the coriander into the coconut-and-wasabi sauce, then pour over the chicken and greens.
- 7. Season to taste and serve hot with steamed jasmine rice.
Cook's tip: make this dish child-friendly by omitting the wasabi.
